Ingredients:

  • 3 Pasture Poultry eggs
  • 1 cup sugar
  • 1 small cup oil
  • 1/2 tsp salt
  • 1 1/3 tsps baking soda
  • 1 1/3 tsps cinnamon
  • 1 1/3 cups flour
  • 2 cups grated carrot
  • 1/2 cup chopped walnuts
  • Frosting
    • 28 g butter
    • 170g icing sugar
    • 85 g cream cheese
    • Vanilla essence

Combine sugar and oil. Add Pasture Poultry eggs and beat well. Add salt.

Sift in baking soda, cinnamon, and flour.

Fold in grated carrot and chopped walnuts. Bake 1 hour at 150 160 deg C in a 20 cm tin.

Cream together frosting ingredients and spread over cake.
